Vegan Butternut Squash Mac n' Cheese

Serves or Makes: 2-4
- 1 cup butternut squash, steamed or roasted
- 1 cup cashews, soaked in hot water for 10 minutes then drained
- 2/ 3 cup water, plus more as needed to thin
- 1-2 tablespoons olive oil
- 3 tablepoons nutritional yeast
- 1/ 2 teaspoon paprika
- 1 teaspoon garlic powder
- 1/ 2 teaspoon onion powder
- salt and pepper to taste
- 1 ( 8-ounce) package dried pasta, cooked
Blend all the ingredients together in a high speed blender until creamy.
Pour over noodles and enjoy.
