ingredients
- 1 tin black beans
- 1/2 cup raw rice (or around 1 cup cooked rice)
- 1/2 cup corn
- Handful of chopped cilantro
- 1/2- 3/4 red capsicum depending on its size
- 1/2 red onion
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Drizzle of olive oil
- juice of 1/2 lime
- salt & pepper
- Avocado
Method
Step 1
Cook the rice as per instructions. Mix everything except the avocado & chilli flakes in a large mixing/salad bowl. Serve with avocado & chilli flakes.
