Using an air fryer for the salmon make these recipe take under 25 minutes to prepare. This is a great base recipe that is easily adaptable so you can put your own spin on it. You can swap the rice for quinoa, farro, or another grain.

ingredients

  • 1 1/2 lbs fresh salmon
  • 2 tablepoons olive oil
  • 1 clove grated garlic
  • 1 teaspoon salt
  • 1 lemon, juiced
  • 2 cups cooked basmati rice
  • 1 cucumber, sliced
  • 2 cups arugula
  • 1-2 cups cherry tomatoes, halved
  • 2 ounce feta
  • 1/2 red onion, sliced
  • 1 cup olives, pitted
  • 3 tablepoons olive oil
  • 1 tablepsoon red wine vinegar
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt

Method

  • Step 1

    Preheat air fryer or oven to 425 degrees.

  • Step 2

    Combine 1 tbsp olive oil, garlic, 1 tsp salt, and lemon juice in a medium sized bowl. Add salmon and mix to coat. Let marinate while you prepare the bowl toppings, or in advance up to 1 hour.

  • Step 3

    Prepare bowl toppings as described in recipe (ie slice cucumbers, chop tomatoes, etc).

  • Step 4

    Air fry or roast salmon for 15 min or until desired temperature.

  • Step 5

    Make the vinaigrette: Combine vinaigrette ingredients in a small bowl, stir or shake if lidded bowl.

  • Step 6

    Assemble the bowls with the rice, arugula, cucumbers, tomatoes, feta, red onions and olives. Top with salmon. Drizzle with the greek vinaigrette.
