ingredients
- 14 ounces puff pastry
- Powdered sugar
- Mint leaves
Macerated Fruit
ingredients
- 1 1/2 cups mixed berries
- 2 tablespoons sugar
- 1 teaspoon cornstarch
Cream Cheese Mixture
ingredients
- 4 ounces softened cream cheese, room temperature
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Lemon zest
Egg Wash
ingredients
- 1 egg, beaten
- 2 teaspoons water
Method
Step 1
Thaw puff pastry according to package instructions.
Step 2
Macerate berries by mixing them with sugar and cornstarch and set aside.
Step 3
Mix room temperature cream cheese with sugar, vanilla, lemon juice and lemon zest.
Step 4
Gently roll your pastry and cut into 8 rectangles. Score the edges and add about a tbs of cream cheese mixture and top with 2 tablespoons of the berry mixture.
Step 5
Brush egg wash and sprinkle coarse sugar on the edges.
Step 6
Bake in a preheated oven at 400 F for about 20 mins; finish with powdered sugar and mint leaves and enjoy!
