Purple yams are used to give this chia pudding a beautiful purple hue. Use a spoonful of your favorite nut butter, adjust the consistency with your choice of nut milk, and top with lots of berries!

ingredients
- 1 small purple yam, steamed or roasted in the oven until softened
- 2 tablespoons nut or seed butter
- 2 cups plant based milk
- 1/2 cup chia seeds
- 2 teaspoons purple sweet potato powder
- sweetener, to taste
Method
Step 1
In a jar, mash the cooked yam, then mix in the nut/seed butter and milk. Whisk in chia seeds and sweeten to taste, then add enough sweet potato powder to your desired color. Place in the fridge to set for 3+ hours. Once ready to eat, stir well and serve with your favorite toppings.
