This easy, elegant earl grey and lemon loaf cake  topped with icing and sliced lemons will make a satisfying tea time snack or sweet breakfast.

  • 1/2 cup oat milk
  • 1 1/2 cups all-purpose flour
  • 4 Earl Grey tea bags
  • 1/2 cup melted unsalted butter
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teasoon lemon zest
  • 1/4 teaspoon salt
  • 2 tablespoons honey
  • Lemon slices, for garnish



  • 1/2 cup icing sugar
  • 2-4 teaspoons milk
  • 1 teaspoon vanilla extract


  • Step 1

    Bring the oat milk to a boil and steep 2 tea bags in the milk. Remove from heat and let cool.

  • Step 2

    Preheat oven to 350ºF. Grease a loaf pan.

  • Step 3

    Mix sugar, butter & honey together. Add the eggs in one at a time.

  • Step 4

    Add flour, salt & baking powder and mix. Add the tea infused milk along with the tea leaves from inside the remaining two tea bags and mix.

  • Step 5

    Pour batter into loaf tin and bake for 30-45mins or until a knife or cake tester inserted comes out clean. Remove from oven and let cool.

  • Step 6

    In a bowl, combine icing ingredients and pour over the cooled loaf. Top with sliced lemons to garnish if desired.
