Chocolate Covered Peanut Butter Filled Dates

"TIP: EAT MORE DATES these are great for snacking, dessert, or putting them in cute little jars as christmas gifts! homemade gifts are always better than bought in my opinion - especially if they’re edible...? .• pitted dates .• natural peanut butter .• @hukitchen chocolate gems .• whole almonds slice the dates open and scoop a small amount of peanut butter in the middle - dip the whole date into the melted chocolate until fully covered (I like to use two forks here to help get off excess chocolate) then place on a baking sheet lined with parchment paper. lightly press down a whole almond onto each date. place in the fridge until chocolate has hardened (about 30 minutes) - remove and eat! or place in an airtight container and store back in the fridge. hope you have a great rest of your week friends! #thepeachyprodigy"

These chocolate covered dates are filled with peanut butter (or any nut butter of choice). You can also decorate with whole almonds, or hazelnuts to peanuts to coconut flakes! Make these healthy treats asap!

ingredients

  • 1 box pitted dates
  • 1/2 cup peanut butter, or as needed
  • 1 cup chocolate chips
  • Almonds, whole, to place on top of each date

Method

  • Step 1

    Prepare a sheet pan with parchment paper. Melt chocolate chips by microwaving at 30 second increments until completely melted. Set aside.

  • Step 2

    Open pitted dates and scoop in peanut butter in the center and dip into the melted chocolate. On a prepared parchment paper, place each chocolate covered date to dry. On each date, place a whole almond on the top.
