Yes you heard me right! This mac and cheese is not your typical cheese and pasta. It is filled with chunks of buffalo chicken and topped with blue cheese and cheddar cracker crumbs! What more could one want? Serve this recipe at your next cook out, tailgate, or game night!"

Method

  • Step 1

    Mix chicken and 2 tablespoons of buffalo sauce in a medium bowl, set aside. Preheat oven to 350°F.

  • Step 2

    In a medium sauce pot, bring 6 cups of water to a boil. Stir in pasta and cook for 8-10mins or until pasta is done, occasionally stirring.

  • Step 3

    Drain pasta in a colander. While pasta is draining, add plant based or regular milk to the same sauce pan. Next sprinkle in the cheese and mix into the heated milk.

  • Step 4

    Add cooked pasta back into the cheese sauce in the pan and mix well. Add the chicken and stir to combine.

  • Step 5

    In an oven safe skillet add the combined mac and cheese and chicken mixture. Top with cheddar cheese, blue cheese crumbs, and crushed up Annie's Organic Cheddar Bunny Crackers and bake, uncovered, for 5 minutes.

  • Step 6

    Then set the oven to broil and let it broil for 3-5 minutes, Be sure to check it. You want the cracker crumbs to be slightly browned. Remove from the oven, drizzle with ranch and enjoy!
