For the Soup


  • 1 cup dry red lentils
  • 1/4 of a large Hokkaido diced about 2 1/2 cups
  • 1 large onion, diced
  • 1-2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon chili flakes (optional)
  • Salt and black pepper to taste
  • 3-4 cups vegetable broth
  • 1/2 cup coconut milk (optional)
  • Juice and zest of 1/2 large lemon

Optional Toppings


  • Fresh sage and thyme
  • Crispy oyster mushrooms
  • Coconut yogurt
  • Walnut oil


  • Step 1

    Sauté onions and garlic in a large pot with olive oil, add the pumpkin and lentils.

  • Step 2

    Add the spices and cook for a few minutes. Mix in the broth, cover the pot, and let simmer for about 10-15 minutes, over medium-high.

  • Step 3

    Once the pumpkin and lentil are cooked through, add the lemon and coconut milk. Simmer until thicken a bit more and serve with your favorite toppings or as mentioned above.
