This fun two-toned bundt cake is made by adding a dose of cocoa powder and delicious Nutella to half of the cake batter before being layered into a pan and baked until golden brown. For the Cake:

  • 3 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 2 cups granulated sugar
  • 1 cup olive oil
  • 3/4 cup full fat plain yogurt
  • 1/2 cup Mascarpone cheese
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • 1 tablespoon cocoa powder, sifted
  • 1/4 cup Nutella

For the Nutella Ganache:

  • 1 cup Nutella
  • 1 cup heavy cream
  • 1/3 cup unsalted butter
  • 1 teaspoon kosher salt
  • 2 tablespoons light corn syrup

Method

To make the cake:

  • Step 1

    Preheat oven to 350F degrees. Coat a bundt or tube cake pan with butter or nonstick cooking spray. Dust lightly with flour, tapping out excess.

  • Step 2

    Whisk flour, baking powder and salt in a medium bowl. Set aside.

  • Step 3

    Mix sugar, olive oil, yogurt, and mascarpone cheese in a large bowl using a hand mixer. Beat in eggs one at a time, until fully incorporated, then add vanilla and milk.

  • Step 4

    On low speed, mix flour mixture into wet ingredients, until just combined. Remove about 2 cups of batter into the empty flour bowl and beat in cocoa powder and Nutella. Mix until chocolate batter forms.

  • Step 5

    Pour vanilla batter into prepared pan. Tap to even out the batter. Using a ladle or ice cream scoop, drop chocolate batter on top of vanilla batter.

  • Step 6

    Using a knife or skewer, swirl batters together, just enough to create a marble but do not over mix.

  • Step 7

    Bake for 50 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for an hour before removing from the pan.

To make the ganache:

  • Step 1

    Place Nutella in a medium bowl. Heat heavy cream, butter, salt and corn syrup in a saucepan until just about to boil.

  • Step 2

    Pour hot cream mixture over Nutella, mix until smooth. Allow to sit for 15 to 20 minutes to thicken. Pour ganache over warm cake and let set before serving.
