Turkey, Swiss and Salami Sandwich with Sriracha Mayo and Quick Pickled Onions

We hosted a sandwich throwdown at FeedfeedBrooklyn a few week's back with our friends at Udi's Gluten Free to celebrate the launch of their new sandwich bread that is both sturdier and larger, making it perfect for epic sandwiches!  We were so inspired by the amazing competititon the day of the event that we decided to throw our own hat in the ring and put together this Turkey, Swiss and Salami Sandwich with Sriracha Mayo and Quick Pickled Onions!  Read more about the event here.

Serves 1

Ingredients

¼ small red onion, thinly sliced into rounds
Pinch of sugar
Pinch of salt
1 Tbsp fresh lime juice
Lime zest
2 Tbsp mayonnaise
1 tsp Sriracha
½ tsp fresh lemon juice
2 slices Udi’s Delicious Soft White Gluten Free Bread, toasted
2 thick tomato slices
¼ English cucumber, sliced
½ cup arugula
2 slices turkey breast
2 slices swiss cheese
4 pepperoni slices
4 salami slices

Directions

In a small bowl, combine red onion, sugar, salt, lime juice, and zest. Set aside for about 15 minutes. In a small bowl, combine mayonnaise, Sriracha, and lemon juice, then set aside. 

Divide Sriracha mayonnaise in half and spread evenly across each slice of toast. Top one piece of toast with red onions, tomatoes, cucumbers, and arugula, then layer with turkey, swiss, pepperoni, and salami. Add remaining slice of toast, cut sandwich in half, and serve immediately.
