  • 1 tablespoon Filippo Berio Extra-Virgin Olive Oil
  • 1 (14 ounce) package spicy chorizo sausage, casings removed
  • 1 medium yellow onion, chopped
  • 5 garlic cloves, minced
  • 3 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 3/4 cup mushrooms, finely chopped
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup dry white wine
  • 4 cups chicken broth
  • 2 (15 ounce) cans white beans, drained and rinsed
  • 1 bunch lacinato kale, stems discarded and leaves torn
  • Parmesan, for serving
  • Simply Organic Crushed Red Pepper Flakes, for serving

Method

  • Step 1

    Heat the oil over medium-high heat in a large Dutch oven. Use the back of a fork to crumble chorizo into small pieces and cook until it turns brown and crispy, approximately 8-10 minutes.

  • Step 2

    Once done, remove the chorizo using a slotted spoon and set it aside. Pour off all but 2 tablespoons of oil.

  • Step 3

    Add the onions to the pot and cook until they become soft and translucent, usually taking about 5 minutes.

  • Step 4

    Add the garlic, carrots, celery, and mushrooms, and continue cooking until the vegetables are soft and fully cooked down, which should take another 3-4 minutes. Season the mixture with salt and pepper.

  • Step 5

    Add the wine to the pot, scraping up any browned bits from the bottom. Allow the wine to reduce by half, approximately 2 minutes.

  • Step 6

    Add the chicken broth and beans and bring the mixture to a boil.

  • Step 7

    Once boiling, reduce the heat to a simmer, add the cooked chorizo, and simmer for 20 minutes. Season the dish to taste

  • Step 8

    Add in the torn kale leaves in the pot and cook until slightly wilted, usually around 2 minutes.

  • Step 9

    Discard the bay leaf before serving the soup in bowls, garnishing with freshly grated Parmesan and red pepper flakes. If desired, accompany it with crusty bread.
