- 2 (8-ounce) packages cherry tomatoes
- 1/ 4 cup olive oil
- 2 cloves garlic
- Kosher salt and pepper, to taste
Preheat the oven to 425°F.
Add the cherry tomatoes and garlic cloves to a sheet tray. Drizzle the olive oil, salt and pepper over top and gently toss to combine.
Roast in the oven until the tomatoes soften and some start to burst, 20-25 minutes. Remove from the oven and allow to cool slightly. Serve it with your favorite pasta or as a salad topper!
