Salads
As simple as salad can be, sometimes all that prepping and chopping can make getting your daily veggie intake daunting. At the beginning of each week, we like to prepare a big batch of chopped salad to make getting enough greens a no-brainer.
Here's a quick recipe to try this week:
3 heads Romaine, chopped, cleaned and spun dry 1 red pepper, diced 1 hot house cucumber, seeds removed, chopped 3 carrots, chopped 1/2 can hearts of palm, chopped 1 can chick peas, drained and rinsed
Layer all the ingredients (starting with the lettuce) in a large air-tight container. The salad will last for several days in the fridge, just add dressing of choice as you go.
