A Fresh Start to 2016  -  Get Your Greens!

Looking for inspiration beyond a simple  sauté or salad to get more greens into your diet? Whether you are sticking to a resolution or just need to reset your eating habits after the long holiday season, we've pulled together our favorite recipes featuring leafy greens that are long on flavor & nutrients, a win win and a fresh start to 2016!

 


 

 

Salads
 

 

As simple as salad can be, sometimes all that prepping and chopping can make getting your daily veggie intake daunting.  At the beginning of each week, we  like to prepare a big batch of  chopped salad to make getting  enough  greens a no-brainer.

Here's a quick recipe to try this week:

3 heads Romaine, chopped, cleaned and spun dry
1 red pepper, diced
1 hot house cucumber, seeds removed, chopped
3 carrots, chopped
1/2 can hearts of palm, chopped
1 can chick peas, drained and rinsed 

Layer all the ingredients (starting with the lettuce) in a large air-tight container.  The salad will last for several days in the fridge, just add dressing of choice as you go.

Kale & Other Greens

Pestos, Gremolatas, Chermoulas & Chimichurri


Try a pesto rich in leafy greens like this Swiss Chard & Walnut version from@small_eats.  Uses: spoon a bit over grilled chicken or steak, as a sandwich spread, or add a dollop to hummus for added flavor.
