ingredients

  • 1/2 large watermelon, cubed
  • 2 cups strawberries, quartered
  • 1 cup feta cheese, cubed
  • 1-2 cucumbers, thinly sliced
  • fresh basil
  • fresh mint
  • 2 pounds chicken breasts, grilled and seasoned to your liking

Balsamic Reduction

ingredients

  • 2 cups balsamic vinegar
  • 1/2 cup brown sugar

Balsamic Reduction

Method

  • Step 1

    Bring balsamic vinegar and brown sugar to a boil and let simmer for about 20 minutes or until it’s reduced by about half. Transfer to a bowl and let cool!

  • Step 1

    Roughly chop grilled chicken breasts and set aside.

  • Step 2

    Arrange all ingredients on a wooden board, starting with fresh mint. Then add a row of cucumbers, watermelon, feta chunks, fresh basil, chicken, strawberries, and more watermelon chunks.

  • Step 3

    Drizzle with balsamic reduction and serve.
