This Watermelon Strawberry Salad with Chicken makes for a beautiful summer board! Fresh cut watermelon, feta cheese, strawberries, and chicken all join forces with fresh basil and mint for a quick and easy lunch that'll be sure to delight your guests!

- 1/ 2 large watermelon, cubed
- 2 cups strawberries, quartered
- 1 cup feta cheese, cubed
- 1-2 cucumbers, thinly sliced
- fresh basil
- fresh mint
- 2 pounds chicken breasts, grilled and seasoned to your liking
- 2 cups balsamic vinegar
- 1/ 2 cup brown sugar
Bring balsamic vinegar and brown sugar to a boil and let simmer for about 20 minutes or until it’s reduced by about half. Transfer to a bowl and let cool!
Roughly chop grilled chicken breasts and set aside.
Arrange all ingredients on a wooden board, starting with fresh mint. Then add a row of cucumbers, watermelon, feta chunks, fresh basil, chicken, strawberries, and more watermelon chunks.
Drizzle with balsamic reduction and serve.
