ingredients
- olive oil
- chili flakes
- 1 small onion diced
- Short noodle of choice
- 1 large clove garlic sliced
- 8 brussels sprouts halved
- 8-10 cremini mushrooms
- 7 large green olives sliced
- 1/2 cup cooked chickpeas
- 1 1/2 cups walnut tofu meat
- 4 cups torn kale hard, stem removed
- 1/2 cup hot pasta water
- Vegan parm or nutritional yeast
- Salt and cracked pepper
Method
Step 1
Cook pasta, reserve 1 cup water. In a large deep sided pan heat oil and chili flakes. Cook onion until translucent, add garlic and mushrooms and cook until mushrooms are golden.
Step 2
Add in airfried brussels, meat, chickpeas, olives and kale. Toss to coat. Season well with salt and cracked pepper. Add pasta, pasta water and toss to emulsify. Add in cheese and toss again. Check for seasoning and serve immediately!
