Vegan Strawberry Banana Bread with Chocolate Chips

  • 3 tablespoons chia seeds
  • 3 ripe bananas, mashed
  • 1 cup strawberries, hulled, and divided
  • 1/ 2 cup cashews, crushed
  • 2 teaspoons baking powder
  • 1 teaspoon lemon zest
  • 1 1/ 2 cups wholegrain spelt flour
  • 1/ 2 cup vegan chocolate chips


  • Step 1

    Preheat oven to 350˚F and grease a 9 by 5 inch loaf pan. Place chia seeds in a small bowl with 1 1/2 cups water and stir.

  • Step 2

    Mash the bananas and half of the strawberries. Try to do it with a fork and if the strawberries are too hard you can use an immersion blender.

  • Step 3

    Add crushed cashews, baking powder, lemon zest and the chia “egg”.

  • Step 4

    Slice the remaining strawberries into cubes and add them as well, stirring to combine.

  • Step 5

    Add the spelt flour and chocolate chips. Mix, then fill the batter into greased a baking pan.

  • Step 6

    Bake 50 minutes or until a cake tester inserted in the center comes out clean.
