- 3 tablespoons chia seeds
- 3 ripe bananas, mashed
- 1 cup strawberries, hulled, and divided
- 1/ 2 cup cashews, crushed
- 2 teaspoons baking powder
- 1 teaspoon lemon zest
- 1 1/ 2 cups wholegrain spelt flour
- 1/ 2 cup vegan chocolate chips
Preheat oven to 350˚F and grease a 9 by 5 inch loaf pan. Place chia seeds in a small bowl with 1 1/2 cups water and stir.
Mash the bananas and half of the strawberries. Try to do it with a fork and if the strawberries are too hard you can use an immersion blender.
Add crushed cashews, baking powder, lemon zest and the chia “egg”.
Slice the remaining strawberries into cubes and add them as well, stirring to combine.
Add the spelt flour and chocolate chips. Mix, then fill the batter into greased a baking pan.
Bake 50 minutes or until a cake tester inserted in the center comes out clean.
