  • 1 1/2 cups uncooked short grain sushi rice (U.S.–grown)
  • 2 cups water
  • 3 tablespoons unseasoned rice vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt

  • 9 sticks (5 ounces) imitation crab meat, thinly sliced
  • 1/4 cup Kewpie mayonnaise
  • 1 tablespoon sriracha
  • 1/2 teaspoon fresh lime juice
  • 1/8 teaspoon sesame oil
  • 1 avocado, thinly sliced
  • 2 Persian cucumbers, julienned

Method

To make the Sushi Rice:

  • Step 1

    Rinse the sushi rice 4-5 times until the water runs clear. Cook the rice with 2 cups of water in a rice cooker.

  • Step 2

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer to a large bowl and gently fold in the seasoning mixture.

To make the Spicy Crab Filling:

  • Step 1

    Thinly slice the imitation crab. In a medium bowl, mix the crab with Kewpie mayonnaise, Sriracha, lime juice, and sesame oil until well combined.

  • Step 2

    Thinly slice the avocado and julienne the cucumbers.

To assemble the Sushi Rolls:

  • Step 1

    Wrap a bamboo sushi mat with plastic wrap and have a small bowl of water nearby to wet your fingers.

  • Step 2

    Place a half-sheet of nori on the bamboo mat. Spread about 1/3 cup of sushi rice evenly across the nori using your hands (wet them to prevent sticking). Press the rice firmly and sprinkle sesame seeds over the rice.

  • Step 3

    Flip the nori so the rice side is down. Place the spicy crab mixture along the center of the nori, then top with cucumber and avocado slices.

  • Step 4

    Gently lift the bamboo mat and roll the nori over the filling, applying light pressure. Roll until the rice ends and press gently to tighten the roll. Tuck the plastic wrap around the roll to shape it firmly.

  • Step 5

    Dip a sharp knife in warm water and slice the roll into even pieces, wiping the knife between cuts for clean slices.

  • Step 6

    Serve the spicy crab rolls immediately with soy sauce, wasabi, pickled ginger, and enjoy!
