  • 3 large russet potatoes, cut into fries
  • Cold ice water, for soaking
  • 1 (11 ounce) jar EPIC Beef Tallow
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

  • 1 New York strip steak (about 1-inch thick)
  • Kosher salt, to taste
  • 1 tablespoon EPIC Beef Tallow
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, smashed
  • 1 sprigs resh rosemary
  • 2 sprigs fresh thyme

For the Garlic Pepper Sauce:

  • 2 tablespoons unsalted butter
  • 1 small shallot, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup EPIC Jalapeño Beef Bone Broth
  • 1/4 cup heavy cream
  • 1 teaspoon freshly ground black pepper
  • Kosher salt, to taste
  • 1 tablespoon chopped fresh parsley
  • Garlic aioli (optional), for dipping

Method

  • Step 1

    Place the steak on a wire rack, pat it dry, and season both sides with salt. Set aside at room temperature while you prepare the fries.

  • Step 2

    Cut the potatoes into fries and soak them in cold ice water for at least 30 minutes to remove excess starch. This ensures crispy fries.

  • Step 3

    Drain the potatoes and pat them completely dry with a towel to prevent oil splatter.

  • Step 4

    Heat EPIC Beef Tallow in a deep pan or skillet to 325°F. Reduce the heat to medium-low and fry the potatoes in batches for 6-8 minutes until golden brown and crispy.

    Toss the hot fries with Parmesan cheese, parsley, salt, and black pepper.

    Heat 1 tablespoon EPIC Beef Tallow in a skillet over medium-high heat.
