Crumb
ingredients
- 50 grams white breadcrumbs
- olive oil
- 2 cloves garlic, finely chopped
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh parsley, finely chopped
Gnocchi
ingredients
- 500 grams gnocchi
- olive oil
- 3 cloves garlic, crushed
- 2 tablespoons tomato purée,
- 3/4 teaspoon chili flakes
- 3 roasted peppers, jarred or homemade
- 100 millileters double cream
- 1 ladle pasta water
- 25 grams parmesan
- 25 grams butter
- 50 grams dolcelatte
- parsley, to taste
Crumb
Method
Step 1
Gently sweat the garlic for 2 minutes in olive oil.
Step 2
Add the breadcrumbs, rosemary, parsley, lemon zest and seasoning.
Step 3
Mix and fry over a medium heat until golden and crisp.
Step 4
Stir regularly to avoid burning.
Step 5
Once cooked, place crumb onto a plate to keep crisp.
Gnocchi
Step 1
Chop the roasted peppers into a fine dice and remove any seeds.
Step 2
Put the water on to boil for your gnocchi, adding a good dash of salt to it.
Step 3
Add a good glug of olive oil to a large frying pan over a low heat.
Step 4
Sweat garlic for 2 minutes.
Step 5
Add chili flakes, tomato purée and diced roasted peppers. Stir and cook over a medium heat for 3-4 minutes.
Step 6
Cook the gnocchi according to instructions, making sure to reserve some of the pasta water.
Step 7
Add the cream and 1 ladle of your gnocchi water to the pepper mix.
Step 8
Stir and cook gently for 3-4 minutes until it thickens slightly.
Step 9
Add the Parmesan, dolcelatte and season.
Step 10
Add additional pasta water to loosen the sauce as needed.
Step 11
Add the gnocchi and stir.
Step 12
Plate the gnocchi and garnish with the crumb topping and fresh parsley.
