This shrimp pasta dish is packed with flavor. It's a touch spicy, citrusy, and garlicky. 

Some tips when making this recipe: 1) If you don't have minced garlic, use garlic paste. 2) You can replace coconut milk with your milk of choice. 3) Reheat the pasta over low heat in a pot with a little water.

ingredients

  • 5 garlic cloves
  • 1 white onion
  • 100 grams aji amarillo pasta
  • 150 ml white wine
  • 50 ml olive oil
  • 1 grapefruit
  • 60 grams butter
  • 100 grams parmesan cheese
  • 1 lemon juice & zest
  • Salt & black pepper
  • 200 grams shrimp
  • 150 ml coconut milk
  • 25 grams parsley

Method

  • Step 1

    In a pan/pot add the olive oil and sweat the garlic with the white onion over low heat for 10 minutes covered, add the yellow pepper paste and cook for 5 more minutes. Deglaze with white wine, reduce by half and add the pasta, water, coconut milk, lemon zest and juice and cook covered until pasta is almost al dente.

  • Step 2

    Add the prawns seasoned with salt to the pasta cooking, cover and cook quickly, no more than 3 minutes so that they are juicy.

  • Step 3

    Remove from the heat and add the butter, Parmesan cheese and chopped parsley, add more water or coconut milk if necessary, rectify the seasoning and serve.
