This brightly hued beetroot and tart orange cooler is the perfect, refreshing drink for when you want to sip on something special without the alcohol

ingredients

  • 1 beetroot, scrubbed and rinsed
  • 2 oranges, juiced
  • 1 tablespoon Jaggery (can substitute any sweetener of choice)
  • 1 1/2 teaspoons fresh lemon juice
  • Black salt, to taste
  • Mint leaves, to garnish

Method

  • Step 1

    In a pot, bring a 2 cups of water to a boil with the sweetener. Add the beetroot and boil until cooked through (about 1 hour). Let it cool. Remove the beets and chill the water.

  • Step 2

    Add orange juice, lemon and a pinch of black salt. Stir well.

  • Step 3

    Garnish with mint leaves and serve chilled.
