This brightly hued beetroot and tart orange cooler is the perfect, refreshing drink for when you want to sip on something special without the alcohol.

ingredients
- 1 beetroot, scrubbed and rinsed
- 2 oranges, juiced
- 1 tablespoon Jaggery (can substitute any sweetener of choice)
- 1 1/2 teaspoons fresh lemon juice
- Black salt, to taste
- Mint leaves, to garnish
Method
Step 1
In a pot, bring a 2 cups of water to a boil with the sweetener. Add the beetroot and boil until cooked through (about 1 hour). Let it cool. Remove the beets and chill the water.
Step 2
Add orange juice, lemon and a pinch of black salt. Stir well.
Step 3
Garnish with mint leaves and serve chilled.
