ingredients
- 440 grams bread flour, plus extra if needed while kneading
- 6 grams instant yeast
- 4 grams salt
- 50 grams sugar
- 3 eggs
- 120 ml whole milk
- 120 grams unsalted butter, room temperature
Method
Step 1
Mix dried ingredients flour, yeast, salt, sugar together. Add eggs, mix with the flour until combined. Next, add milk, pour half of the milk at first, then add the rest while kneading. Finally add butter, cut the butter into small pieces, add each piece at a time and knead until smooth. Usually it takes 25-30 minutes to knead all by hand. And about 8 minutes by using stand mixer.
Step 2
Proof for 1 hour or more if your room temperature is cool. Stop until the dough rises double in size.
Step 3
Divide the dough into 8 balls. Knead and shape in baking loaf pan. I use 9x5 inches loaf pan.
Step 4
Proof again in 60-90minutes or until double in volume.
Step 5
Brush egg wash on top and Bake at 350F in 30-35 minutes.
