London Fog with Lavender

ingredients

  • 1 1/4 cups milk
  • 1 1/4 cups water
  • 1 tablespoon loose Earl Grey tea
  • 1 tablespoon brown sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon dried lavender, plus more for garnish

Method

  • Step 1

    Boil water and steep Earl Grey tea and dried lavender for 8 minutes.

  • Step 2

    While waiting for tea to steep, heat milk in a saucepan on low until small bubbles start to form along the sides. Take off heat and pour milk into a French press.

  • Step 3

    Pump the French press plunger until milk doubles in volume. Set aside.

  • Step 4

    Strain out and discard the tea leaves and lavender. Stir in sugar and vanilla extract into the tea.

  • Step 5

    Divide the tea into two tea cups. Pour on top the frothed milk into both cups. Garnish with dried lavender.
