A Note From Ina-Janine Johnsen

Its January, the sun has turned and the days are getting longer. Add a dash of snow and winter is manageable here in the cold north.

A good thing about long days inside is the amount of cooking and baking you can get done. So here is just a small selection of what is happening in kitchens all over Scandinavia.

A Note From Ina-Janine Johnsen

Pickling with vibrantly colored foods like red onions and cranberries, brings out the brightness in these foods, and adds a little sunshine to cold winter months. Here is the translation of Aicha's recipe: Marinated herring is popular food in Scandinavian country´s. It is common to marinated your own herrings and its easy. Initially – the herring we use is cured with salt. The salt is removed by putting the herring in cold water. Than we add basic flavours as vinegar and sugar and other kinds of ingredients to obtain more delicate and different kind of flavours.
