"Life is like Nachos. You have to pour on it with the best toppings! Bringing you some Loaded Vegan Nachos to celebrate Friday! My kids say that the best way to eat their veggies is on their nachos. I have to agree. These nachos were da bomb. Fresh organic corn chips with melted daiya foods vegan shredded cheddar, and topped with whatever I could find in my fridge that needed to be eaten today or else. Serves or Makes: 4-8
- 4 cups corn chips
- 1 cup salsa, of choice
- 1/ 2 cup pickled jalapeno peppers, quartered
- 1/ 3 cup radishes, sliced in rounds
- 1/ 2 cup cherry tomatoes, halved
- 1/ 3 cup black olives, roughly chopped
- 2 cups vegan cheese, of choice
- Cilantro, for garnish
Preheat oven to 400ºF.
Layer chips and toppings, except for cilantro, in an oven-safe skillet. Bake for 10-15 minutes.
Remove from the oven and top with cilantro. Enjoy!
