Chili Oil, Spinach and Feta Pastries

Honestly, such a delicious snack that your friends and family will loooove ✨

This recipe is inspired by the wonderful Greek Spanakopita, aka spinach and feta pie (Tiropitakia is just with feta). It’s one of my favourite things to eat in Greece! I also love spice so I thought, why not combine the two beauties and make it an even more tasty treat 😍 andddd I’m happy to say it worked 🔥

Serves or Makes: 7 large parcels

ingredients

  • 200 grams feta
  • 125 grams mozzarella
  • 300 grams spinach, wilted
  • 1 egg
  • 1 tablespoon chili oil
  • 1 package filo pastry dough (7 sheets)
  • Melted butter
  • Chili flakes, to garnish

Method

  • Step 1

    Preheat the oven to 170C fan.

  • Step 2

    Combine your feta, mozzarella, spinach, egg, and chili oil in a bowl. Mix thoroughly until broken down and well combined.

  • Step 3

    Get a sheet of filo pastry and cover half of one side in melted butter. Fold over lengthways and place a large spoonful of the feta mixture at the bottom of the rectangle. Fold up in a triangular motion and butter the end to make sure the pastry doesn’t come undone. Repeat this for all the sheets of pastry.

  • Step 4

    Place the pastries on a tray and brush with butter and sprinkle over with some chili flakes. Bake in the oven for 25 minutes or until golden and crispy. Remove from the oven, let them cool down a bit, then enjoy!
