ingredients

  • 12 frozen breaded chicken sliders or tenders
  • 1 (14.5 ounce) can Red Gold Tomatoes Diced Tomatoes with Basil, Garlic, and Oregano
  • 1 (14.5 ounce) can Red Gold Tomato Love Diced Tomatoes with Green Chiles
  • 1 tablespoon Red Gold Tomato Sweet Basil Tomato Paste
  • 4 garlic cloves
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 12 sweet Hawaiian slider rolls
  • 12 slices fresh mozzarella cheese
  • 2 tablespoons basil, thinly sliced
  • 1/4 cup freshly grated parmesan
  • 3 tablespoons butter, melted
  • 1/4 teaspoon garlic powder
  • 1 teaspoon fresh parsley, finely chopped

Method

  • Step 1

Preheat oven to 425°F and cook frozen chicken sliders according to package directions.

  • Step 2

Meanwhile make the marinara sauce by adding Red Gold diced tomatoes, Tomato Love diced tomatoes, tomato paste, garlic, salt, and pepper into a small saucepan. Simmer for 10 minutes until flavors have combined. Remove from heat and blend with an immersion blender until smooth. Season to taste.

  • Step 3

Slice the Hawaiian rolls in half carefully through the middle and then separate the top half from the bottom half. Spread about ¼ cup of the marinara sauce over the bottom half of the rolls.

  • Step 4

Top with the cooked chicken tenders and then add another ¼-½ cup of the marinara sauce over top of the tenders.

  • Step 5

Reduce oven heat to 350°F degrees. Add fresh mozzarella slices on top of the marinara and then place into the oven to melt the cheese, about 10 minutes.

  • Step 6

Remove from the oven and sprinkle with fresh basil. Cover with the top half of the rolls.

  • Step 7

Mix melted butter, garlic powder, and parsley together and then lightly brush the tops of the rolls.

  • Step 8

Sprinkle with parmesan cheese and then place into the oven again for another 10-15 minutes until the tops of the rolls are lightly toasted.

  • Step 9

Remove from the oven and serve with extra marinara sauce.
