For the Chicken Marinade
ingredients
- 1 pound chicken breast, cut into chunks
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
For the Sauce
ingredients
- 1/2 white onion, chopped
- 1 red bell pepper, chopped
- 1/2 cup sun dried tomatoes, chopped
- 1 tablespoon tomato paste
- 2 cups fresh spinach
- 1/4 cup chicken stock
- 2 cups cream
- Salt, to taste
- Pepper, to taste
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 cup parmesan cheese
For Serving

- 1/2 cup al dente rigatoni
Marinate the Chicken
Method
Step 1
Mix spices in a bowl and pour over chicken and mix well, store in fridge until ready.
Make the Sauce
Step 1
Start by sautéing olive oil, garlic, onion, and red bell pepper for 5-6 mins or until fragrant.
Step 2
Add in tomato paste, chicken broth, sun dried tomatoes, spinach, and spices. Mix well and sauté for a few minutes, add in the cream.
Step 3
While your sauce simmers on LOW, cook your chicken in a different pan over some olive oil (this shouldn’t take more than 6-7 mins depending on how big your chunks are).
Step 4
Add pasta into your sauce after simmering for 10 mins. Remove from heat (sauce will thicken as it cools).
Step 5
Add in chicken & parm - stir, let sit, and then crush it.
