These Vegetable Pancakes are made with a medley of leeks, carrots, and red cabbage. Wach pancake is a delightful blend of textures and tastes. The soy sauce dipping sauce adds a savory finish that perfectly complements the colorful and satisfying pancake.

ingredients

  • 1 cup Flour
  • 1/2 teaspoon Kosher Salt
  • 1 cup Leek Greens, sliced thin
  • 1/2 cup Carrot, grated
  • 3 Scallions, sliced in 1” pieces
  • 1/2 cup Red Cabbage, sliced in thin 1" pieces
  • 1 cup Jalapeño, seeds removed sliced in thin 1” strips
  • 2 tablespoons Avocado Oil

Sauce

  • 2 tablespoons Soy Sauce
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Water
  • 1 tablespoon Sesame Oil
  • 1 teaspoon Sesame Seeds

Method

  • Step 1

    Mix together the flour, salt, and water. Add the veggies and mix until combined

  • Step 2

    Mix together the ingredients for the sauce and set aside. Preheat a large pan over medium and add the avocado oil; scoop 1/4 cup

  • Step 3

    Preheat a large pan over medium and add the avocado oil; scoop 1/4 cup batter per pancake and flatten slightly with a spatula; cook 2-3 mins per side until golden brown and then place on a plate lined with paper towel to remove excess oil. Dip in the sauce and enjoy!
