Buckwheat & Cheese Waffles With Fried Egg And Za'atar

Have you tried za'atar before? It goes great with just about everything - but especially with eggs

RECIPE:

Makes 8
1 egg
250ml whole milk
55g cheddar
25g parmesan
150g buckwheat flour
1 tablespoon baking powder
sea salt & freshly ground black pepper
50g butter

Toppings:
1 egg
1 teaspoon za'atar

Melt the butter and allow it to cool. Grate the cheeses. Whisk together the egg, milk and grated cheeses. In a separate bowl combine buckwheat flour, baking powder, salt and pepper. Add the dry ingredients to the egg-milk-cheese mixture, and combine the batter until smooth.
Stir in the melted butter.
Heat the waffle iron and brush it with oil/butter/ghee. Cook the waffles according to the manufacturer's instructions or until desired doneness. The waffles can be kept warm in a preheated oven (low temperature), stored in the fridge or frozen for later use.
While the waffles are cooking fry an egg until the white has set and the yolk is still runny. If you like continue cooking for a more set yolk.
Top a couple of waffles with the fried egg, sprinkle loosely with za'atar and enjoy.
