It's National Sunkist Day and we are celebrating with our favorite citrus recipes. This Cara Cara Granita is bright, sweet, tart, and the perfect little treat to bring some sunshine back into your life. The best part about this granita is its simplicity, it's 4 ingredients that you blend, freeze, scrape, and eat. Very fruit forward, especially when you save the orange peels to use as fun little cups.

  • 4 Sunkist Cara Cara Oranges
  • 1 cup hot tap water
  • 1/4 cup granulated sugar
  • pinch of kosher salt

Method

  • Step 1

    Slice off the tops of each Sunkist Cara Cara orange about 1 ½” inches down. Carefully run a knife between the flesh and the white pith of each orange and cut an X into the flesh. Scoop flesh into the carafe of a blender, scraping out as much juice and pulp as possible from each. Set orange peels aside to serve as the “cups” for the granita.

  • Step 2

    Stir sugar into hot water to dissolve, then add to the blender and puree on high speed for about 30 seconds.

  • Step 3

    Pour orange mixture into a shallow container (a large flat tupperware or a glass baking dish work well) and freeze for 1 hour.

  • Step 4

    Scrape ice crystals with a fork to loosen them, then return container to freezer for another 30 minutes. Repeat the process 2-3 more times until mixture is fully frozen, about 2 ½ hours total.

  • Step 5

    Spoon granita into each orange “cup” and freeze until ready to serve.
