If you have a waffle iron, then you can have these crispy potato waffles for breakfast in under 20 minutes. Top with a fried egg, avocado, and this creamy sriracha sauce for the ultimate brunch at home.

Recipe Card

ingredients

  • 1 russet potato, spiralized
  • 1-2 tablespoons oil, for cooking
  • onion powder, to taste
  • garlic powder, to taste
  • salt, to taste
  • 1 whole egg
  • egg, fried, to top
  • avocado, mashed, to top

Sriracha Sauce

ingredients

  • 1 tablespoon garlic spread
  • 1 tablespoon Sriracha
  • water, to thin out as needed

Method

  • Step 1

    Add 1-2 tablespoons oil in a large pan over medium heat. Add noodles, and season with onion powder, garlic powder, and salt. Cover and cook for 8-10 minutes until noodles are soft, stirring occasionally to prevent burning.

  • Step 2

    Preheat a waffle iron on medium high and spray with cooking spray/oil. Transfer cooked potato noodles to a bowl and mix in egg. Spoon into the waffle maker and cook for 4-6 minutes until waffles are crispy and golden. Carefully remove with a fork.

  • Step 3

    To make the sauce, whisk together garlic spread and sriracha. Add water to thin out as needed.

  • Step 4

    Top waffles with mashed avocado, a fried egg, and sriracha garlic sauce!
