Cucumbers marinated with wasabi and soy sauce, this fresh snack is sweet, salty, and spicy. This goes great with noodle dishes or Korean fried chicken.

ingredients

  • 6 mini cucumbers, washed and ends removed
  • Kosher salt, to taste
  • 1/4 cup water
  • 1/4 cup mirin
  • 1 tablespoon soy sauce
  • 1 1/2 teaspoons sugar
  • 3 garlic cloves, grated
  • 2 teaspoons wasabi
  • 2 teaspoons sesame oil

Method

  • Step 1

    Slice cucumber depending on your preference. Note: To get the swirl cut, you would use two chopsticks and slice at an angle (video here.)

  • Step 2

    Mix cucumbers with a generous amount of salt and let it sit for 30 minutes. Rinse well, 2-3 times.

  • Step 3

    Combine water, mirin, soy sauce, sugar, garlic, wasabi, and sesame oil.

  • Step 4

    Marinade the cucumbers for at least 3 hours. (Overnight is recommended.)

  • Step 5

    Sprinkle with sesame seeds when ready to eat.
