- 2 ounces pho-spiced tequila (recipe below)
- 3/4 ounce fresh lime juice
- 1/2 ounce ginger simple syrup (recipe below)
- Dash of saline (or a pinch of sea salt)
- Muddled cilantro
- Slice of Thai chili (for garnish)

For the Pho-Spiced Tequila
- 1 cup tequila
- 2 star anise, toasted
- 1 cinnamon stick
- 3 whole cloves
- 1 teaspoon coriander seeds

For the Ginger Simple Syrup
- 1/2 cup granulated sugar
- 1/2 cup water
- 1-inch piece of fresh ginger, peeled and sliced
Method
Step 1
To make the pho-spiced tequila, combine tequila with toasted star anise, cinnamon stick, cardamom pods, whole cloves, and coriander seeds. You can either sous vide the mixture for 1 hour or let it infuse in a sealed mason jar at room temperature for 2-3 days, shaking occasionally. Once infused, strain out the spices.
Step 2
To make ginger simple syrup, combine the sugar, water, and ginger in a small saucepan. Bring to a simmer until the sugar dissolves, then let cool and strain out the ginger. Set aside. Keep stored in a container in the refrigerator until ready to use.
Step 3
In a cocktail shaker, muddle a few cilantro leaves. Add 2 oz of the pho-spiced tequila, lime juice, ginger simple syrup, and a dash of saline (or a pinch of sea salt).
Step 4
Fill the shaker with ice and shake vigorously until the ingredients are well mixed and chilled.
Step 5
Strain the mixture into a glass filled with ice. Garnish with a slice of Thai chili for an added kick.
Step 6
Serve immediately and enjoy!
