ingredients
For the Chicken
- 1 pound boneless, skinless chicken breasts, cut into small pieces
- Kosher salt, to taste
- 1 tablespoon cajun seasoning
- 1 teaspoon Italian seasoning
- 1 tablespoon minced garlic
- 1 cup mozzarella cheese
- 1/2 cup heavy cream
- 2 tablespoons oil
- 1/2 (14.5 ounce) can Red Gold Petite Diced Tomatoes with Green Chilies
- 2 tablespoons Red Gold Roasted Garlic Tomato Paste

For Cheese Sauce:
- 2 tablespoons all purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Kosher salt, to taste
- 1/4 teaspoon ground black pepper
- 1 cup extra sharp cheddar cheese
- 1 cup milk
- 4 tablespoons butter
- 1 tablespoon diced jalapeño

For the Fries
- 4 large russet potatoes, cut into fries
- 3 tablespoons cornstarch
- 1 tablespoon vinegar
- Kosher salt, to taste
- Chives, chopped for garnish
- Oil, for frying
Method
For the chicken:
Step 1
In a pan, heat oil, add garlic and saute for 30 seconds until fragrant. Add chicken and Cajun seasoning. Cook the chicken for about 8-10 minutes or until golden and cooked through. Transfer the chicken to a plate.
Step 2
Reduce the heat to medium. Add garlic and the Red Gold Roasted Garlic Tomato Paste to the skillet and cook for about 20-30 seconds. Add the Red Gold Petite Diced Tomatoes with Green Chilies. Whisk in the cream and Italian seasoning until smooth. Let the sauce cook for another 3-5 minutes.
Step 3
Add the chicken back to the skillet and spoon some sauce over top. Season with extra salt and pepper if needed. Garnish with mozzarella cheese and let the cheese melt for 1-2 minutes on low heat.
For the cheese sauce:
Step 1
Melt the butter in a saucepan over medium heat. Sprinkle the flour over the top, stirring constantly for about 1 to 2 minutes until a thick paste forms.
Step 2
Slowly pour the milk to the flour paste, whisking constantly. Continue cooking, whisking constantly until the mixture thickens, about 3 minutes.
Step 3
Add the shredded cheese, whisking constantly until it is melted. Add the chopped jalapeños, paprika and garlic powder. Taste, then add salt and pepper to taste.
For the fries:
Step 1
Wash the potatoes, Use a crinkle cutter knife to cut them into slices, then cut them into individual fries.
Step 2
In a pot add water, salt and vinegar. Parboil the potatoes for 5 minutes. Drain and pat dry the potatoes with a kitchen towel.
Step 3
In a mixing bowl add cornstarch and salt. Mix well.
Step 4
Add the sliced potatoes. Coat the potatoes with the flour mixture. Shake off the excess flour. Heat oil and fry fries, in small batches, until golden brown and crispy. Drain on a clean cooling rack. Sprinkle it with salt.
Step 5
In a serving bowl add a layer of fries, top it with the chicken layer, finish by adding melted cheese sauce on top, garnish with chives and more jalapeños if desired. Serve warm.
