ingredients
- 1 head cauliflower, broken into florets
- 1 cup all purpose flour
- 1/2 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 1/4 cups water
- 1 cup panko breadcrumbs
- 1 cup barbecue sauce
Cabbage Slaw
ingredients
- 1/2 head red cabbage, thinly sliced
- 1 carrot, thinly sliced
- 2 tablespoons vegan sandwich spread
- 1/2 teaspoon smoked paprika
Other

- 1 1/2 cups cooked brown rice
- Fresh cilantro
Method
Step 1
Preheat the oven to 400˚F. Line a baking sheet with a silicone baking mat or parchment paper.
Step 2
In a large bowl, combine flour, smoked paprika, garlic powder, black pepper and salt . Stir in water until a smooth batter forms. In a separate bowl add breadcrumbs.
Step 3
Using tongs dip the cauliflower florets into the wet mixture. Shake off any excess. Then roll in breadcrumbs and transfer to a the lined baking sheet, leaving 1/2 inch space between florets.
Step 4
Bake cauliflower for 30 minutes until golden brown.
Step 5
While cauliflower is baking, prepare the slaw. In a large bowl add cabbage, carrot, mayo, salt, pepper and paprika. Toss until well incorporated.
Step 6
To a large bowl, add baked cauliflower, drizzle barbecue sauce and toss to coat in sauce.
Step 7
Add brown rice to a serving bowl, top with cauliflower and slaw. Garnish with chili flakes, cilantro and serve immediately.
