Vegan Roasted Tomato Basil Soup

  • 12-14 Roma tomatoes, sliced lengthwise
  • 8 cloves garlic, peeled
  • 8-10 basil leaves
  • 1.5-2 cups vegetable broth or water
  • 1/2 cup almond milk
  • 1 large yellow onion, sliced
  • 1 tablespoon Earthbalance vegan butter
  • salt and pepper to taste
  • red pepper flakes to taste
  • 1 tablespoon olive oil


  • Step 1

    Preheat oven to 400ºF

  • Step 2

    In a bowl, toss tomatoes and garlic in olive oil & generously season with salt & pepper. Transfer to a sheet tray and bake 45 minutes.

  • Step 3

    Heat olive oil and vegan butter in a large pot over low heat. Add the sliced onions and cook 10-15 minutes until very soft.

  • Step 4

    Transfer onions to a food processor or blender along with the tomatoes, garlic, and basil and blend until smooth.

  • Step 5

    Transfer the tomato mixture back into the pot and add the broth and almond milk. Simmer for 10 mins.

  • Step 6

    Season to taste and serve with grilled cheese or your favorite bread toasted!
