Graham Cracker Crust

ingredients

  • 2/3 cup gluten free flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup butter
  • 2 ounces unsweetened baking chocolate
  • 4 ounces semisweet baking chocolate
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla extract

  • 1 1/2 cup mini marshmallows

Method

  • Step 1

    Preheat oven to 350°F, grease an 8x8 metal pan with cooking spray and set aside.

  • Step 2

    Set ¼ cup of Annie’s bunny grahams aside and crush remaining bunny grahams either in a food processor or by placing them in a gallon size bag and rolling them with a rolling pin.

  • Step 3

    In a medium bowl mix together crushed bunny grahams, sugar and melted butter until combined. Press mixture into 8x8 pan.

  • Step 4

    Combine flour, salt and baking powder in a mixing bowl and set aside.

  • Step 5

    In a medium sauce pan melt butter and chocolate over low heat. Once melted remove from heat and add sugar and vanilla.

  • Step 6

    Whisk eggs and add to sauce pan. Mix until everything is combined and smooth. Slowly add dry mix and lightly combine (don’t over mix).

  • Step 7

    Pour batter over graham cracker crust and place in oven for 30-37 minutes. Brownies are done when toothpick comes out clean.

  • Step 8

    Top brownies with marshmallows and place under broiler for 3-5 minutes. Keep a close eye, they will burn fast. Once toasted to perfection top with remaining bunny grahams.

  • Step 9

    Let cool completely, then cut into squares. Enjoy!!!
