Garlic & Shallot Crunch Butter...it is absolutely insane, and the textures!! This more than makes up for my lack of compound butter recipes lately...

Serve this compound butter on a board next time you are entertaining alongside freshly baked bread. We recommend serving the Garlic & Shallot Crunch Butter with Chili Oil Foccacia.

ingredients

  • 7 garlic cloves, thinly sliced
  • 2 shallots, thinly sliced
  • 8 ounces high-quality unsalted butter
  • Salt & pepper, to taste
  • Olive oil, to cover the garlic and shallots
  • 1 tablespoon honey

Method

  • Step 1

    Add the shallots and garlic to a pan, cover them in olive oil and turn the heat to high for 2-3 min. Lower heat to low, and let them crisp up, about 20 min.

  • Step 2

    Remove garlic and shallots from oil, add to a paper towel. Salt them and chop them up pretty small.

  • Step 3

    Add the crispy shallots and garlic to the room temperature butter with 1-2 tbsp of the garlic shallot oil and honey.

  • Step 4

    Use some of that oil to toast some bread.
