ingredients
- 10 ounces light coconut milk
- 1 teaspoon vanilla bean paste or vanilla extract
- 1 tablespoon almond butter (optional)
- 3 tablespoons raw chia seeds
- 1 tablespoon maple syrup (or any sweetener of choice)
Method
Step 1
In a small bowl, combine almond butter, maple syrup and vanilla. Slowly add coconut milk and stir to combine. Add chia seeds and whisk to combine. Refrigerate for at least 2 hours, whisking a couple times throughout.
Step 2
To serve, layer chia pudding, fresh fruits, blueberry compote, tahini granola, or toppings of choice.
