For the Curry:

  • 1 cup plain yogurt (curd)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

For the Tempering:

ingredients

  • 1 tablespoon ghee (or avocado oil)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 dried red chili
  • 2 cloves garlic, sliced `
  • 6 to 8 curry leaves

Method

  • Step 1

    Prepare the Yogurt Mixture: In a medium bowl, whisk together yogurt, ground cumin, paprika, turmeric, salt, and black pepper until smooth. Set aside.

  • Step 2

    Make the Tempering: Heat ghee or avocado oil in a small pan over medium heat. Add cumin seeds, mustard seeds, dried chili, sliced garlic, and curry leaves. Sauté until the garlic is golden and fragrant, stirring frequently to prevent burning.

  • Step 3

    Pour the hot tempering over the prepared yogurt mixture. Use a spatula to gently mix everything together.

  • Step 4

    Serve immediately with steamed quinoa or rice.
