This quick and easy avocado toast topped with soft scrambled eggs is the perfect breakfast or lunch in a hurry.

  • 1 slice sourdough bread (or any bread of your choice)
  • Dairy-free almond based chive cream cheese
  • 1 ripe avocado
  • 2 whole eggs
  • avocado oil
  • Everything bagel seasoning, to taste


  • Step 1

    Toast a piece of sourdough bread. 

  • Step 2

    Spread dairy-free almond based chive cream cheese on the toast.

  • Step 3

    In a bowl, mash an avocado with a fork. Season with salt to taste. Spread the mashed avocado on your toast.

  • Step 4

    In a separate bowl, whisk two pasture raised eggs together.

  • Step 5

    Heat a little avocado oil on a pan at low-medium heat. Pour in the eggs, and slowly push the edges towards the middle as the eggs begin to cook. Once cooked to your liking place the eggs on top of your toast.

  • Step 6

    Sprinkle with everything but the bagel seasoning and enjoy.
