French onion soup has jammy, caramelized onions topped with cheesy, crunchy bread in a cute little ramekins. What could be better than enjoying one of these hot, comforting ramekins for dinner?

ingredients
- 4 medium white onions, halved and thinly sliced
- 1 baguette, sliced
- 1/2 cup unsalted butter
- 2 cloves garlic, chopped
- 3 bay leaves
- 6 cups low sodium beef broth
- 3 thyme sprigs (plus thyme leaves to garnish)
- 1/2 cup red wine
- 1/2 teaspoon sugar
- 1 teaspoon Worcestershire sauce
- 1 tablespoon flour
- 2 cups Gruyere cheese, grated
- Salt and pepper, to taste
Method
Step 1
In a large pot over medium heat, melt 1/2 cup unsalted butter. Add the onions, garlic, bay leaves, thyme sprigs and sugar. Stir and let the onions cook down, stirring occasionally, for 25-30 minutes or until they are very soft and caramelized.
Step 2
Once onions are caramelized add 1/2 cup red wine. Increase the heat to high and bring to a boil for 3-5 minutes. Once the liquid has evaporated by 3/4, reduce to a low-simmer and stir gently.
Step 3
Add 1 tablespoon flour and stir for 2-3 minutes, making sure not to burn the flour. Add 6 cups beef broth, salt and pepper, and Worcestershire. Simmer for 10-15 minutes.
Step 4
Preheat oven on broiler setting.
Step 5
Place 8 soup ramekins on a baking sheet lined with parchment paper. Ladle broth 3/4 of the way up into each ramekin and top with 2 baguette slices. Sprinkle with a generous amount of Gruyere cheese.
Step 6
Broil for 2-3 minutes or until the cheese is bubbly on top. Garnish with fresh thyme, salt and pepper. Enjoy!
