ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1 1/2 cups all-purpose flour
  • 1/2 cup Dutch-processed cocoa powder
  • 1/3 cup light brown sugar
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon fresh ground nutmeg
  • 2 teaspoons baking soda
  • 1/2 cup molasses
  • 1/2 teaspoon kosher salt
  • 1 egg
  • 1/2 cup demerara sugar

Method

  • Step 1

    In a large bowl whisk together flour, cocoa, baking soda, ground ginger , cinnamon, nutmeg, cloves and salt.

  • Step 2

    In the bowl of your standing mixer or in a large bowl using a handheld mixer cream together butter and light brown sugar until light and fluffy.

  • Step 3

    Beat in the egg and molasses slowly into the butter and sugar mixture.

  • Step 4

    Slowly add the dry ingredients into the wet ingredients and mix until just combined.

  • Step 5

    Wrap the dough in plastic wrap and place it in the refrigerator for an hour.

  • Step 6

    Preheat oven to 350ºF (177ºC) and line two baking sheets with silicone mats or parchment paper.

  • Step 7

    Using your hands make small dough balls. Roll each dough ball in the demerara sugar and place onto baking sheets.

  • Step 8

    Bake for 8-10 mins. Enjoy
