ingredients
- 6 medium-sized (about 2 pounds) potatoes, peeled and cubed
- 4 cups cold water
- 2 teaspoons Better Than Bouillon Roasted Garlic Base
- 1/4 cup unsalted butter
- 1 cup whole milk, warmed
- 1/2 cup grated Parmesan cheese
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons chopped fresh chives, for garnish
Method
Step 1
Place peeled and cubed potatoes in a large pot and cover with cold water. Stir in 1 tsp of Better Than Bouillon Roasted Garlic Base. Bring to a boil over medium-high heat, then reduce heat and simmer for 15-20 minutes or until the potatoes are fork-tender.
Step 2
Drain the potatoes and return them to the pot. Mash until smooth using a potato masher or a ricer.
Step 3
In a small saucepan over low heat, combine the butter, warmed milk, and the remaining 1 tsp of Better Than Bouillon Roasted Garlic Base. Stir until the butter melts and the base dissolves.
Step 4
Pour the milk mixture into the mashed potatoes and stir until they reach a smooth and creamy consistency.
Step 5
Add the grated Parmesan cheese and mix until fully combined. Season with salt and black pepper to taste.
Step 6
Transfer to a serving dish and garnish with chopped chives. Serve warm and enjoy!
