Soft Scrambled Eggs and Ricotta Toast

ingredients

  • 4 large eggs
  • 1 tablespoon chopped chives
  • 1/4 teaspoon coarse salt
  • 1 tablespoon unsalted butter
  • 1/2 cup ricotta cheese
  • 2 slices sourdough, toasted

Method

  • Step 1

    Whisk eggs, chopped chives, and salt. Melt butter in nonstick skillet over medium/low heat. Add eggs and stir with heat proof spatula until eggs are almost cooked but still runny in parts, about 2 minutes. Remove from heat. Add ricotta and stir just until incorporated but clumps of cheese are still visible.

  • Step 2

    Top toasts with eggs and sprinkle with more salt and pepper and chopped chives if desired.
