Soft Scrambled Eggs and Ricotta Toast

"Want to switch up your scrambled egg game? Start with some soft scrambled egg and then fold a few tablespoons of ricotta into them and top with chives or scallions. My Grandmother used to make this for us when we were little (minus the onions and she literally put ricotta into everything!) and I like to make them now because it reminds me of her"

  • 4 large eggs
  • 1 tablespoon chopped chives
  • 1/4 teaspoon coarse salt
  • 1 tablespoon unsalted butter
  • 1/2 cup ricotta cheese
  • 2 slices sourdough, toasted

  • Step 1

Whisk eggs, chopped chives, and salt. Melt butter in nonstick skillet over medium/low heat. Add eggs and stir with heat proof spatula until eggs are almost cooked but still runny in parts, about 2 minutes. Remove from heat. Add ricotta and stir just until incorporated but clumps of cheese are still visible.

  • Step 2

Top toasts with eggs and sprinkle with more salt and pepper and chopped chives if desired.
