I like to cut a thin strip off the rounded bottom of the avocado so that it lies flat on the baking sheet making it more sturdy.

ingredients

  • 2 avocados, halved and pitted
  • 4 thick slices bacon
  • 4 eggs
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon chopped chives

Method

  • Step 1

    Preheat oven to 425ºF. Line a baking sheet with parchment paper. Set aside.

  • Step 2

    Heat a large skillet over medium and cook the bacon until crisp.

  • Step 3

    Spoon out the avocado around the area the pit was to make the hole a bit bigger, then put avocado on the baking sheet. Place a slice of bacon in each avocado half. Crack an egg into each, making sure to keep the yolk in the hole.

  • Step 4

    Bake for 12-15 minutes until eggs cook through. The yolk will jiggle when if you shake the pan, but whites will be set.

  • Step 5

    Add salt and pepper to taste and top with chopped chives.
