Crispy One Pan Chicken

"There is nothing better than an easy, one pan dinner that is light on with dishes but not with flavour. This recipe will give you the most crispy skin chicken with the juiciest flesh. When you are frying your chicken skin side down, something magic happens! And make sure you do not peek by turning over the chicken as it is very important you don’t interrupt that crispy skin process. The most beautiful rich jam like gravy forms on its own from the onions and lemon. You can make some mashed potatoes with this dish however, I prefer to eat just on its own."

ingredients

  • 1 whole chicken quartered, broken into parts
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • Kosher salt, to taste
  • Black Pepper
  • 2 tablespoons olive oil
  • 2 onions, sliced
  • 1 lemon, thinly sliced
  • 2 garlic cloves
  • 1 large handful baby spinach

Method

  • Step 1

    Preheat the oven to 400°F.

  • Step 2

    Sprinkle the chicken with garlic powder, onion powder, dried oregano, thyme and parsley and a generous amount of salt, pepper and olive oil. Massage into the skin of the chicken.

  • Step 3

    In a large skillet pan, place the chicken skin-side down and cook for 10 minutes on medium heat. Start the timer once the pan is searing hot and you can hear the chicken sizzling. Do not move or pick up the chicken as it will disrupt the process of making the skin extra crispy. Turn over and cook for 10 more minutes.

  • Step 4

    Remove chicken from skillet on to a plate. To the same skillet, add onions, lemon, and garlic.

  • Step 5

    Placed seared chicken, skin side up into the skillet. Bake in the oven for 30 minutes.

  • Step 6

    Remove from the oven once the chicken is cooked and sprinkle with spinach. Serve immediately.
