The cardamom adds floral and sweet notes eliminating the need for refined sugar. We love ours topped with organic @driscollsberry raspberries, sliced bananas, a drizzle of @justdatesyrup and a generous sprinkling of hemp hearts."

A Note from Feedfeed

These gluten-free crêpes are made using oat flour and spiced up with cardamom to give a floral depth of flavor- filled with fruit such as banana or raspberries, but any fruit works perfectly here, along with any other spice. These make a great light breakfast or healthy dessert!

ingredients

  • 1 cup oat flour
  • 1 cup milk
  • 2 eggs
  • 1 tablespoon honey, or maple syrup
  • 2-3 cardamom pods, ground, or 1/4 teaspoon ground cardamom
  • dash vanilla extract
  • 1 pinch salt
  • Butter
  • Bananas, thinly sliced, for serving
  • Raspberries, for serving
  • Hemp seeds, for serving

Method

  • Step 1

    Blend oat flour, milk, eggs, honey, cardamom, vanilla and salt in a food processor or blender until smooth.

  • Step 2

    Warm a skillet over medium heat. Add a dollop of butter and brush evenly to coat pan. Pour 1/4-1/2 cup batter into pan and swirl to make a thin crêpe. Cook for 1-2 minutes then gently flip. Cook for 1-2 more minutes until you see a golden brown lattice pattern. Remove from pan and repeat for remaining batter.

  • Step 3

    Fold into triangles and top with fruit, seeds, and more maple syrup if desired.
